Industrial fermentation installations
To ferment food, a starter culture is added. These are natural microorganisms such as yeast, good bacteria or molds that come from the ingredients themselves or from the environment. The food is then stored airtight. The starter cultures multiply during storage.
Fermentation means that fungal and bacterial cultures trigger a metabolic process (fermentation) that leads to a longer shelf life for the food. The food serves as a growth substrate and is subsequently easy to digest.

In the production of salami, the fermented sausage has fallen below the isoelectric point and can then be dried faster and safely.
