Drying is generally understood to mean the removal of liquids from a material or object, the dry material, by evaporation, vaporization, the use of drying agents or other technical applications.
The characteristic feature of drying is therefore the reduction of moisture (moisture removal, dehumidification) through a thermal-physical conversion.
One type of air drying of food is the preservation method of dehydration. In this process, water is removed from the food either naturally (air and sun) or in so-called dehydrators using dry air. Thus the water content is reduced to between 15% and 25%.
Hence, food can be preserved for a longer period of time, as it spoils or goes mouldy much more slowly. The taste is retained and in some cases even enhanced.
